A total of 38 restaurants are taking part in the 4th Annual Outer Banks National Softshell Week, happening May 11–16, 2026. On Hatteras Island, try local favorites like Good Winds Restaurant, Cafe Pamlico, Buxton Seafood, and Sonny’s Restaurant for your softshell fix. This weeklong celebration invites both locals and visitors to explore a restaurant crawl showcasing creative softshell crab dishes, with diners casting votes for their favorites.
New this year are crab inspired cocktails, special in restaurant appearances from Sheldon the Crab, and the debut of the Softshell Express. This immersive tour, produced by Outer Banks Adventures, offers guests the chance to visit local crab shedders and participating restaurants while enjoying tapas style tastings. Tickets will be available soon.
So what exactly is a softshell crab? It is a crab that has recently shed its hard outer shell, leaving it tender and fully edible. Because timing is critical, these crabs are carefully monitored and harvested at just the right moment, often within hours of molting, to preserve their delicate texture. The process is hands on and time sensitive, reflecting the expertise and tradition of local watermen.
